Sonication of yeast biomass is an efficient method for producing edible proteins. By applying 15kHz ultrasound for 30 minutes to Saccharomyces cerevisiae, a 100% loss of cell viability and a 177% increase in amine nitrogen concentration is achieved compared to thermal autolysis. This method is recommended for protein extraction, which increases the nutritional value of food products.
