This innovation transforms off-grade Royal Project Strawberry 89 into gummy jelly, adding value to unsellable produce while promoting farmer income. Using HPLC analysis, antioxidant compounds (anthocyanins, cyanidin-3-glucoside) were confirmed to remain after processing. The product offers appealing taste, texture, and consumer acceptance, making it a sustainable functional food innovation.
